Baked Breakfast Avocado
1 large avocado
2 slices bacon, cooked then crumbled
2 small eggs
Salt and pepper, to taste
2 green onions, chopped
Preheat oven to 425 degrees. Cut avocado in half and carefully remove seed. Make aluminum foil rings to hold the avocados level in your baking dish or you can use a muffin pan. Carefully place the eggs into the avocado seed cavities. Depending on how big the seed is, you may need to spoon out a little extra avocado to make room for the egg. Repeat for other avocado half. Add salt and freshly cracked black pepper on top of the eggs, to taste. Carefully place the dish in oven and bake for 15-25 minutes, or until the eggs are cooked to your preference. Sprinkle on crumbled bacon and green onion pieces. Eat with a fork or spread onto toast!
