Radish Butter
1/2 cup butter, at room temperature
5-6 radishes, finely minced
4 chives, finely snipped
2 tsp. fresh lemon juice
2 tsp. salt
Stir together the butter, radishes, chives, lemon juice and salt in a small bowl. Spread generously on bread or crackers. You can refrigerate the butter in a tightly covered container for up to 5 days or freeze in an airtight container for up to 3 months.
