Ginger Lemongrass Salmon
1 lb. salmon fillets, without skin
5 Tbsp. soy sauce
1 Tbsp. fish sauce
1 tsp. grated ginger
Juice from ½ lime
2 lemongrass stalks, outer layer removed, thinly chopped
A handful of fresh cilantro, chopped
Place salmon fillets in a Pyrex. Combine soy sauce, fish sauce, grated ginger, lime juice and lemongrass in a bowl. Pour the marinade over the fish and marinate for a minimum of 30 minutes. Keep covered in the fridge until ready to cook. Preheat oven to 350 degrees. Cook fish for 20 minutes until it easily flakes with a fork. Top with chopped cilantro and serve.
