Salmon with Swiss Chard
4 garlic cloves, minced
4 Tbsp. extra virgin olive oil
1/8 tsp. sea salt
½ tsp. black pepper
2 Tbsp. dried basil
½ cup orange juice
4 salmon filets
For the Swiss chard:
1 tsp. extra virgin olive oil
1/8 tsp. sea salt
1/8 tsp. black pepper
1 small onion, chopped
1 bunch Swiss chard, chopped
Preheat oven to 375 degrees. In a bowl, mix together garlic, olive oil, sea salt, black pepper, dried basil, and orange juice. Add salmon and mix well. Set aside and let it marinate for about 30 minutes. Lay the salmon in a baking dish and bake for 25 minutes.
In a sauté pan, heat the olive oil until hot. Add sea salt and onions, cook until slightly soft. Add Swiss chard steams and stir for a few minutes. Add the Swiss chard leaves and give it another stir. Add black pepper and turn down the heat to med-low until the leaves are cooked soft.
Plate the Swiss chard and place baked salmon on top.
