Easy Lemongrass Chicken
4 boneless chicken thigh, cut into bite-size pieces
3 Tbsp. soy sauce
1 Tbsp. fish sauce
2 Tbsp. rice wine
½ tsp. sugar
1/3 cup finely chopped lemongrass
¼ cup canola oil
½ cup shredded carrot
½ cup basil leaves
Marinate chicken in fish sauce, soy sauce, rice wine, sugar and lemongrass for 20 minutes. Heat a non-stick pan over medium high, add oil and marinated chicken, stir fry until sizzling and slightly caramelized. Turn off the heat, stir in the basil and carrot and serve.
