1 lb. grass-fed ground beef
3 cups broccoli florets
2 cups chard, chopped
1 medium onion, diced
2 cloves garlic, minced
1 tsp. salt
½ tsp. cumin powder
½ tsp. black pepper
2 Tbsp. vegetable oil
4 non-GMO eggs
Add 1 tablespoon oil to medium saucepan over medium heat. Once the oil is shimmering, add onion and cook until softened and barely browned. Add ground beef, stirring and breaking up the large pieces for even cooking. Add ½ tsp salt, all the cumin powder, and ¼ tsp black pepper. Cook beef, stirring occasionally until cooked all the way through and lightly browned. While beef is cooking, heat remaining oil in another medium saucepan over medium heat. When oil is shimmering, add minced garlic. Cook for about 30 seconds and add broccoli florets. Stir well and cover with lid so broccoli can steam a bit. Cover for about 5 minutes, stirring occasionally. Add chard to broccoli and stir, uncovered for about 5 more minutes. Once broccoli is fork tender and chard is wilted down, add to cooked beef. Fry eggs with a little butter in a non-stick skillet. Sprinkle with salt and pepper to taste. Portion beef and broccoli onto four plates and top each with an egg.
